Ingredients
4 small Quebec duck breasts. Salt and pepper 212 ml orange & Cointreau marmalade Miss Marmelades
Preparation
Score the skin side of the duck breasts with a knife and season.
Heat a casserole dish or large skillet.
Place the duck breasts skin side down and cook for 2 minutes over high heat, then 3 minutes over low heat.
Turn over and cook for 3 minutes on the flesh side (medium rare).
Cover with aluminum foil. In a small skillet, heat the marmalade and reduce (about 5 minutes).
Slice the duck breasts, arrange on plates, and lightly drizzle with marmalade.
